The hand-harvested clusters from the estate\u2019s oldest vineyards are destemmed and left to macerate until the end of spontaneous fermentation, which proceeds slowly thanks to the cool temperatures of late October. During vinification, manual punch-downs are performed several times a day to naturally extract aromas and color. The wine is racked only once fermentation is fully complete.<br \/>\nUnfiltered and unfined, the wine undergoes no stabilization.
