Made 100% from Greco grapes, from historic 20-40 year-old vines cultivated according to the regenerative Organic Forest philosophy, without synthetic chemicals.  <\/p>\n<p>Vinification highlights the raw material with a short 3-day maceration, followed by spontaneous fermentation with indigenous yeasts via pied de cuve, and no added sulfites. Aging lasts six months in stainless steel.  <\/p>\n<p>Its lively and precise sparkle develops in the bottle through natural refermentation, triggered by the addition of frozen must from the same vineyard.
