Cantina del Disordine

We are in Cautano, in the heart of Taburno, where Davide Picariello established Cantina del Disordine in 2022 after years of working the land and a past as a cook and innkeeper. In the vineyard, there are very few treatments, only copper and sulfur, with a focus on preserving and recovering historic plants and meticulously selecting the grapes.

The small cellar, made of natural stone, is human-sized. Fermentations are spontaneous, with no filtration, clarification, or added sulfur. There are no compromises. The cellar hosts steel and fiberglass tanks and employs long macerations for the whites and a lean, direct approach for the reds. Each vintage has its own story. The territory is interpreted year by year.

The main reference territories are Taburno and Tufo, both fascinating for their exposure, altitude, and soil composition. In Taburno, where Aglianico, Trebbiano, and Coda di Volpe are found, the soils are predominantly clay-limestone. In the Tufo area (AV), where Greco is found, the soil is clayey, tuffaceous, and sandy.

Agriculture interacts with the territory, collaborating with those who live in these places, engaging with them, and striving to transmit a less invasive type of work based on the quality of the environment and raw materials. In the cellar, no chemical processes are used to condition the fermenting mass, giving life to free wines. Wines that reflect exactly everything we have experienced during the production year.
