Carignan is a Mediterranean black grape variety cultivated in France (Languedoc), Spain, and Sardinia.
Characteristics
The wine has an intense garnet-red color. On the nose, it offers notes of black plum, cherry liqueur, cocoa, and spices. On the palate, it is robust and tannic, with lively acidity and a long finish.
Pairings
Perfect with cassoulet, herb-roasted lamb, and aged cheeses like Pecorino Sardo.
Curiosities
Surviving phylloxera thanks to its ungrafted roots, it is now celebrated in low-yield versions that highlight its complexity.
