Carricante is Sicily’s high-altitude white grape, grown on Mount Etna’s volcanic slopes. It’s the backbone of Etna Bianco DOC, prized for its freshness and longevity.
Characteristics
The wine has a pale straw-yellow color with green hues. Aromas of green apple, lemon zest, and wild herbs (thyme, oregano) are underscored by volcanic ash. On the palate, it is racy with laser-like acidity, a lean structure, and a flinty finish.
Pairings
Ideal with grilled sardines, caponata (Sicilian eggplant stew), and fresh ricotta.
Curiosities
The name “Carricante” derives from “carica” (load), referencing its high yields. Etna Bianco DOC requires at least 60% Carricante.
