Known for its resilience to hot climates, it produces medium-bodied wines with distinct notes of white peach, green apple, and subtle minerality. On the palate, it reveals vibrant freshness balanced by a creamy softness from lees aging. Historically linked to Roman traditions, it was once used for meditation wines. Today, it is often vinified as a single varietal or blended with Fiano and Greco di Tufo. Ideal pairings include complex seafood dishes like shellfish soups or seafood risotto, while oxidative versions complement aged cheeses like Pecorino di Carmasciano.
