Inzolia (or Ansonica), a Sicilian white grape, is known for delicate aromatic dry wines: orange blossom, fresh almond, and sage hints. Grown on limestone soils between Trapani and Palermo, it’s often blended with Catarratto for structure. Historically used in Marsala, it now excels as a single varietal, especially in high-altitude Madonie versions. Pair with vegetable couscous, sarde a beccafico, or caponata. Fun fact: its name derives from the Arabic “Zolia” (blend). Rare passito versions offer thyme honey and date notes, perfect with Sicilian cannoli.
