Recantina, a rare Venetian red grape, produces medium-bodied wines with cherry liqueur and cinnamon notes. Polished tannins and a toasted almond finish. Nearly extinct in the 1990s, revived for pastissada de caval pairings. Name means “to return,” referencing winter resilience. Volcanic soils add sulfurous minerality.
