Rossetto is a rare white grape native to Lazio, rescued from near-extinction by daring winemakers. Compact clusters and golden-skinned berries yield intense straw-yellow wines with quince, saffron, and toasted almond aromas. Grown near Lake Bolsena on tuff soils, its name refers to the reddish hue of ripening berries. Historically used in papal sacramental wines for its balance of sweetness and acidity, it now pairs with Lazio classics like Bolsena fish soup or carbonara. Fun fact: Nearly abandoned in the 1950s due to international varieties, revival projects have restored it through limited productions.
