Grown on sun-drenched slopes, temperature shifts lock in aromatics. Fermented in stainless steel to retain vitality, it pairs with seafood crudo or spicy Tom Yum soup. Fun fact: Some producers macerate skins for structured “orange wines,” a rising trend.
