Silvaner, a white grape of Austrian origin, thrives in Alto Adige and Friuli.
Characteristics
Dry wines with aromas of Williams pear, green apple, and herbal hints, supported by linear acidity. Cultivated in alluvial valleys, it is historically significant in German viticulture (where it’s called Grüner Silvaner). In Italy, it’s often stainless-steel fermented for crisp drinkability.
Pairings
Quinoa salads, salmon trout, or leek quiches.
Curiosities
Replaced post-WWII by Müller-Thurgau, it’s now revived through interest in rare varieties.
