Lagarinodf, likely a mutation of Lagarino Bianco, is a nearly extinct white grape from Vallagarina. It yields high-acidity wines with pink grapefruit and tomato leaf aromas. South-facing terraces enhance phenolic ripeness. Historically undocumented, it was used to balance acidity in blends. Pair unconventionally with sea bass crudo and redcurrant reduction or ricotta-borage ravioli. Skin-contact versions develop polished tannins and white tea notes, perfect with vegetable tempura.
