Lecinaro, a Puglian black grape from Salento, produces medium-bodied wines with sour cherry, licorice, and briny hints. Bush-trained on rocky red soils, it’s often blended with Negroamaro for structure. Historians link it to the Messapians, who used it in rituals. Pair with orecchiette pasta with broccoli rabe, horse meat stew, or semi-hard Canestrato cheese. Oak-aged versions develop tobacco and coffee notes, perfect with Leccese-style tripe.
