Ribolla Gialla is an ancient white grape variety, native to Friuli-Venezia Giulia and Slovenia, celebrated for its elegance and complexity. Its wines are distinguished by aromas of candied citrus, green apple, white flowers, and a subtle mineral note. The thick skin and disease resistance make it ideal for hillside cultivation, where clay and limestone soils enhance its freshness. Historically, Ribolla Gialla was mentioned as early as the 13th century as a prized wine for noble banquets. Today, it is vinified as a single varietal or blended with Malvasia and Friulano, producing structured wines with vibrant acidity and a savory finish. Ideal pairings include seafood crudo, asparagus risotto, or dishes with aged cheeses like Montasio. Fun fact: In Slovenia, it is known as ‘Rebula’ and is a cultural symbol of the Brda region.
