Semillon is a white grape variety of French origin, cultivated in Italy primarily in Friuli-Venezia Giulia and Trentino-Alto Adige. Known for its versatility, it can produce dry, sweet, or fortified wines. The wines are distinguished by aromas of chestnut honey, dried flowers, ripe peach, and a flinty mineral note. On the palate, the structure is creamy, with moderate acidity and a persistent finish of toasted almond. Excellent with rich dishes like porcini mushroom risotto or smoked salmon. Fun fact: In France, it forms the base of Sauternes, while in Italy, it is often blended with Sauvignon Blanc to add complexity. The vines prefer clay soils and mild climates, where they develop thick skins resistant to botrytis. Some oak-aged versions reveal notes of vanilla and candied ginger.
