Távros of the Pistis Sophia Winery is a refermented wine in the bottle produced with Pergolone grapes. Spontaneous fermentation in fiberglass containers, maceration for 10 days in a closed vat and resting in steel tanks on the lees for 12 months. The refermentation takes place by adding the new vintage’s must.
