The choice of the name comes from two main reasons, the first is the meaning of the Greek words Pistis and Sophia or Faith and Knowledge. Their doctrine is no intervention that can force, accelerate or slow down the processes of natural fermentation, no clarification or filtering that alters the natural and organic balance of wines and no addition of external nutrients (eg vitamins, enzymes, bacteria).
The production is characterized by the exclusive use of indigenous yeasts naturally present in the grapes and a total sulfur dioxide that never exceeds 20 mg per liter.
In the vineyard, the fight against powdery mildew and downy mildew occurs with the sole use of mineral substances such as zeolite and propolis.
