Terracotta Bianco from the Pistis Sophia Winery is an orange wine produced with Pergolone local grapes. Spontaneous fermentation in amphora where maceration proceeds for 8 months, all without decanting and without added sulphites.

We are in Ortona in Abruzzo where the Pistis Sophia winery resides. The choice of the name comes from two main reasons, the first is the meaning of the Greek words Pistis and Sophia or Faith and Knowledge. Their doctrine is no intervention that can force, accelerate or slow down the processes of natural fermentation, no clarification or filtering that alters the natural and organic balance of wines and no addition of external nutrients (eg vitamins, enzymes, bacteria). The production is characterized by the exclusive use of indigenous yeasts naturally present in the grapes and a total sulfur dioxide that never exceeds 20 mg per liter.
