Progetto Sete Winery
Founded in 2013, this is not merely a winery, but an act of agricultural resistance dedicated to the recovery of abandoned vineyards in Priverno.
SETE wines are defined by their creators as “grape juices”: a term that strips the product of any oenological superstructure to celebrate its purest essence.
They are living foods, in constant evolution, born from a philosophy that accepts no compromises: zero additives, zero processing aids, and no added sulfur dioxide at any stage.
Approximately three hectares of vineyards, divided into eleven parcels, are cultivated exclusively with natural methods (Suolo e Salute organic certification).
The focus is entirely on the indigenous grape varieties of Lazio: Ottonese, Moscato, and Malvasia Puntinata, all strictly worked by hand without the use of systemic pesticides.
While life is cultivated in the vineyard, in the cellar SETE is committed to neither taking away nor adding anything. Every stage of the process respects natural rhythms and the integrity of the fruit.
