Pecorino is an ancient white grape variety rediscovered in Marche and Abruzzo, named after sheep (“pecora”) that once grazed on vineyards. It thrives in limestone-clay soils at mid-altitudes.
Characteristics
The wine has a straw-yellow color with green highlights. Floral notes of acacia and hawthorn blend with citrus (grapefruit, lime) and a flinty minerality. On the palate, it is vibrant with crisp acidity, medium body, and a bitter almond finish.
Pairings
Perfect with Adriatic seafood like brodetto (fish stew), stuffed olives Ascolane, and young pecorino cheeses.
Curiosities
Nearly extinct by the 1970s, it was revived by visionary winemakers. Pecorino d’Abruzzo DOC requires 85% minimum Pecorino.
