Sibillino by Annesanti is a white wine made from 100% Pecorino grapes, sourced from the Valnerina region in Umbria. Fermentation is spontaneous, using indigenous yeasts, and takes place in steel tanks with a brief maceration on the skins. This process allows for the extraction of complex aromas and a vibrant freshness, typical of the Pecorino grape variety. The wine is aged for 6 months in steel tanks, preserving its mineral and citrus character.
