The organic domain of Aldo Viola comprises 16 hectares split between two sites near the city of Alcamo on the northwestern coast of Sicily, today it is governed by Aldo, son of Don Ancilino. A rigorous selection process assures that only the highest quality grapes are used for the label of Aldo Viola. The Aldo Viola wine is a product of true passion and know-how transmitted over four generations. Aldo, son of Don Ancilino, was raised in the rhythm of wine making. Their goal is to fuse science with tradition to safeguard their land which is ideally suited for wine growing. Excellence, Nature, and Tradition are the three axis of development pursued by the Viola Family. The small scale of their production(10000 bottles per year) allows Aldo the luxury of taking charge of the entire process; from the planting of the vines to the labeling of the bottles. The naturalistic approach, both in the winery & vineyard, is extreme by the restoration of soil fertility. The cultivation techniques in biological side by side to the concepts of biodynamic tend to enhance management aimed at creating wines that have a strong territorial identity With a philosophy of working in harmony with the forces of nature, Aldo Viola is creating fine naturals wines of elegant character which will only get better with time. Aldo Viola wines are not filtered in order to better conserve their naturals qualities.
