The Cantina di Francesco Annesant is located in Castel di Lago, a hamlet of Arrone, in the lower Valnerina. After renovating some rooms within the family farm, he transformed them into a cellar to be used for the production of wine. Francesco gives life to wines faithful to the peasant heritage, favoring spontaneous fermentation, maceration on the skins also for whites, vinification in terracotta amphorae, minimal use of sulphites and bottling without filtration. Francesco does not hide his little love for filtering, bottling takes place strictly in a waning moon phase.
