Mantonico is a white wine produced from 100% Mantonico, spontaneous fermentation in steel vats for 50% of the grapes with maceration on the skins for 48 hours and the remaining 50% pressed whole. Aging in amphora for 8 months and then in the bottle, no clarification no filtration.
