La Chimere is a white wine produced by Brand et Fils Winery with 100% Riesling grapes using the solera method. Gentle pressing of whole clusters, spontaneous fermentation, and aging in a very large old oak barrel called Foudre that lasts for over 3 years (2017-2018-2019), no filtration or clarification without the addition of sulfur.
