This Moscato Passito al Governo di Saracena is a wine produced by Azienda Agricola Diana. Recognized as a Slow Food Presidium for a few years, it is a dessert wine meant for contemplation. It is produced exclusively in this village using an ancient process, which involves separate vinification of Moscato grapes from the local variety and other grapes. The must obtained from vinifying Malvasia and Guarnaccia grapes is concentrated to increase the sugar content, while the distinctive aroma and taste come from the Moscatello grapes, which are harvested and dried several weeks before the main harvest. The dehydrated berries of Moscatello and Adduroca are hand-selected, manually pressed, and then added to the concentrated must (from the first pressing).
