Pas Dosé is a classic method sparkling wine by Cenci Winery produced exclusively from Pinot Grigio grapes. Spontaneous fermentation in stainless steel and then matures in steel barrels for 7 months with regular bâtonnage (stirring of the lees). Refermentation in the bottle using the traditional champagne method and is disgorged “à la volée” after 24 months of aging on the lees, without any dosage (no added sugar).
