Sam Illon from Cantina Fra I Monti is a macerated white wine made from native white grape varieties. It undergoes spontaneous fermentation with maceration on the skins for about 10 days in an open vat, followed by aging in cement amphorae for 12 months on its lees. The wine is unfiltered, unfined, and contains no added sulfites. This wine is dedicated to a young man who has long been part of the Fra I Monti family and serves as a label against exploitation in agriculture.
