La Casa dei Cini – Ventù 2021

La Casa dei Cini Winery born in 2003 by Clelia, Riccardo, and Aristide as a family-owned organic agricultural business, with the help of their entire family. They produce various products, including wine, olive oil, garlic, lavender, honey, and more. In addition to their agricultural activities, they also operate as an educational farm. Their estate spans five hectares, with an additional two hectares under construction, all located in the hills around the town of Pietrafitta. The soil in this area is quite uniform, a legacy of the retreat of Lake Tiberinus, which left behind sand, limestone, clay, parts of the skeleton, and a type of marl similar to the one found in the Friuli region. To protect their vineyards, they use copper and sulfur treatments, and the soil is cultivated in alternating rows. The goal is to enhance the vitality and fertility of the soil to improve its balance. Manure-based fertilization is also used in this regard. To complete the production cycle, they maintain a garden in front of their house where Clelia cultivates seasonal produce, striving to rotate the varieties from year to year. Inside the family house, there’s the “nana cantina,” which was converted from what used to be Grandfather Bonaventura’s cellar. You can still find the conduit through which freshly pressed grape juice used to arrive from outside. The cantina contains stainless steel tanks, a large barrel at the end of its career, a truncated cone-shaped fermentation tank, and a tonneau that has been used multiple times. All fermentations take place here, often initiated using a pied de cuve derived from slightly early harvested grapes from certain vineyards that have never been treated. The aging process depends on the type of wine, but in general, they use only stainless steel, with one exception. Over the years, La Casa dei Cini has gradually grown, producing around twenty thousand bottles divided into five wine types, including three reds, one rosé, and one white.
