Metodo Classico by Cantina Lusenti is a sparkling wine made from Pinot Nero grapes. The grapes are hand-picked and placed in small crates. After destemming, they undergo a light contact with the skins for a few hours. This is followed by a gentle pressing, and the resulting must ferments in concrete tanks. In spring, the wine is bottled using the classic tirage method, allowing for secondary fermentation in the bottle. The aging process takes place on the lees for at least 48 months, with manual riddling on traditional pupitres. After disgorging, the bottles rest in the cellar for an additional 5-6 months before being released for sale.
