Bastaro is a red wine produced by Tenuta San Marcello Winery with 100% Lacrima di Morro d’Alba grapes. Spontaneous fermentation in stainless steel tanks with the grape skins and frequent pump-overs (remontaggi). After fermentation, 80% of the wine is aged in stainless steel tanks on the fine lees (sediment) while the remaining 20% is aged in buried Georgian amphorae (Qvevri) for 6 months and an additional 1 month in the bottle.
