The Petrosa from Santo Spirito by Cantina Etnella, led by Davide Bentivegna, is a red wine made from native Nerello Mascalese and Nerello Cappuccio grapes. These grapes come from Alberello and Pre-Phylloxera Alberello vineyards that are over 120 years old. The Santo Spirito vineyard is planted on soil rich in lava stone, which gives the wine its name, Petrosa. It is called Rosso Ancestrale due to the traditional winemaking technique used on Mount Etna, involving whole clusters and a short maceration process.
