Fiorenzo from Cantina Bakkanali is a straightforward and lively Sangiovese, born from the rocks of Monte Amiata. Bakkanali Fiorenzo is a pure IGT Toscana, from a 0.6-hectare vineyard in Poggioferro at 600 meters above sea level, cultivated organically in biodynamic conversion. The 18-year-old vines root in marly soil rich in carbonate and limestone rocks. In the winery, the process is minimal and respectful: spontaneous fermentation with indigenous yeasts, using whole-cluster semi-carbonic maceration to highlight fruit and freshness.
Aging takes place in concrete, preserving immediate drinkability and the primary character of the grape. The result is a terroir-driven red with total sulfites under 25 mg/l, honestly expressing its high-altitude origin.
