Nadè from Cantina Jerax is a bottle-refermented wine produced from Greco Nero and other local varieties—the few that survived the downy mildew outbreak that affected the entire 2023 harvest. The grapes are grown without any chemical treatments in the vineyard, using only natural sulfur and copper. Maceration for 1 day on the skins, spontaneous fermentation with indigenous yeasts, followed by 5 months of aging in fiberglass. In spring, the refermentation in the bottle was carried out using Zibibbo must from the previous vintage. No filtration or fining.
