Le Cese Selezione is a red wine from Cantina Collecapretta, produced from a selection of old Sangiovese vines. The grapes undergo an 8-day maceration on the skins, and at the end of alcoholic fermentation, the wine is transferred into glass-lined cement tanks, where it rests for two years. It is then moved to a 500-liter used oak barrel (sixth passage) for 18 months of additional aging. Finally, it is bottled without added sulfites and aged in bottle for another year.
