Zino produced by I Mandorli Winery is the result of an agricultural project on the island of Pantelleria, originating from a 60-year-old vineyard. It’s an orange wine produced from Moscato di Alessandria (Zibibbo) grapes. After harvesting, the grapes are transported to a winery in Tuscany, where they undergo a maceration on the skins for 5 days. Spontaneous fermentation occurs in open vats, followed by the completion of fermentation in concrete tanks with stirring every 7 days, aging in Tava amphorae for 6 months and in the bottle for an additional 6 months.
