The Furioso is a sparkling white wine refermented in the bottle by Iacopo Paolucci, made from Grechetto and Moscato Giallo grapes. The grapes undergo overnight maceration to extract indigenous yeasts, followed by aging in stainless steel until spring. At that time, the refermentation process begins by adding fresh must from the same vintage. This process is carried out without the use of chemical enological additives, except for a minimal use of sulfites, and without filtration.
