Il Roscialesco is a red wine by Iacopo Paolucci, made from Sangiovese, Cabernet Sauvignon, and Grero grapes. The wine undergoes separate vinifications with 20-30 days of skin maceration, followed by aging in a combination of stainless steel and tonneaux for 8 months, and an additional 4 months in the bottle. It is vinified without the use of chemical enological additives, except for minimal sulfite use, and without filtration.
