Ammuscito is a sweet passito wine by Iacopo Paolucci, crafted from Grechetto and Moscato Giallo grapes. The manually harvested, very late-season grapes are laid on mats in a dedicated drying room for two months. After the drying process, the grapes are taken to the cellar for destemming, crushing, and gentle pressing. The resulting must undergoes fermentation for about a month, followed by 8 months of aging in stainless steel and 6 months of bottle aging. The wine is vinified without chemical enological additives, except for minimal sulfite use, and without filtration.
