Tristo white macerated wine by winemaker Marco Merli is made from Trebbiano Toscano grapes. It undergoes whole cluster maceration in a CO2-saturated environment for 8 days, followed by aerobic fermentation on the skins for 12 days in small 10-hectoliter PVC vats. 30% of the wine completes fermentation and matures in oak tonneaux, while the rest ages in stainless steel. The two batches are blended in the spring before bottling in May.
