Indisciplinato is a white wine produced by Tenuta San Marcello Winery with 100% Verdicchio grapes. It’s a blend of two different vinifications: 30% spontaneous fermentation in buried Georgian amphorae in contact with the skins, while the remaining percentage ferments spontaneously in stainless steel. Aging process involves 30% of the wine aging in buried Georgian amphorae (Qvevri) for about 9 months and the other part aging for 9 months in stainless steel tanks on fine lees. Subsequently, they are blended and continue to age together for 1 month in the bottle.
