Il Bianco di Cesare of Tiberi Winery is produced with pure Grechetto grapes, hand-harvested and directly crushed in an old manual press located in the vineyard. The grapes ferment in an old wooden vat for two days without controlling the temperature. The wine is aged in an old oak barrel and is decanted in January. In Spring, it is bottled by hand without adding sulphites and without filtering. We do not use chemicals either in the vineyard or in the winery.
