Perme by Cantina De Simone is a red wine predominantly made from Dolcetto d’Alba, Barbera d’Alba, and Nebbiolo d’Alba grapes. It undergoes spontaneous fermentation and a 1-week maceration with frequent pump-overs, followed by aging in steel tanks for 8 months.
