Alice is much more than a Falanghina: it is the faithful and unfiltered story of a unique volcanic territory, Sessa Aurunca, on the slopes of the extinct Roccamonfina volcano. Born from vineyards cultivated according to certified organic and biodynamic principles, this Falanghina aims to be the most authentic and spontaneous expression of the vineyard, the vintage, the grape variety, and the soil that generates it. A sensory journey that starts from volcanic sands and goes straight to the heart of the drinker. Spontaneous fermentation in amphora, 7 months of maceration in buried Georgian Qvevri with 10 days of manual punching down (follature) to extract color and structure, and finally 12 months of aging in amphora and 7 in the bottle. The result is a white wine of volcanic depth, aromatic complexity, and absolute purity.

Tasting Notes

  • Appearance: Intense golden yellow color with amber reflections, bright and enveloping, typical of long maceration in amphora.
  • Nose: The olfactory profile is complex and layered. Notes of ripe yellow-fleshed fruit (apricot, peach, quince), candied citrus peel, dried chamomile flowers, medicinal herbs (thyme, oregano), and a powerful volcanic mineral vein recalling lava stone, lapilli, and pumice emerge. The maceration provides hints of tea, sweet spices, and a slight smoky note.
  • Palate: The entry is dense, enveloping, and vertical. The structure is full, supported by a fine and elegant tannic texture. The acidity is vibrant and balances the richness of the wine, offering a taut and deep sip. The sapidity is explosive, almost briny, extending the finish into a mineral persistence of rare intensity. A very long finish, with returns of ripe fruit, bitter almond, and a light spiciness. A white wine of staggering depth and personality.

Recommended Pairings

Its structure and complexity make it a meditation wine and a choice for great occasions. Perfect with noble and structured fish dishes (cacciucco, fish soup), stewed white meats, rabbit cacciatore, and aged hard cheeses. Exceptional with authentic Campanian cuisine and dishes based on porcini mushrooms and truffles. A bottle that deserves to be shared in special moments.
