Dodò is much more than a wine. It is a declaration of affection, a toast to a life that flows as light as the bubbles in a glass. A wine for the pool, for laughter, for moments that need no explanation. Primitivo grapes harvested by hand, short maceration on the skins, spontaneous fermentation with indigenous yeasts, a long 12-month rest in amphora, and finally the re-fermentation in the bottle triggered by Fiano must. The result is a vibrant, complex, and deeply personal sparkling wine, just like its inspiring muse.

Serve at 8° – 10° C
Production Area Italy (produced by Enozwine)
Vinification Spontaneous fermentation with indigenous yeasts. Short maceration on the skins.
Aging 12 months in amphora.
Sparkling Process Re-fermentation in the bottle with fermenting Fiano must.

Tasting Notes

  • Appearance: Bright, pale rosé color, with cherry reflections and a fine, persistent, lively, and dancing perlage.
  • Nose: The olfactory profile is surprising and layered. Notes of small red fruits (wild strawberry, raspberry), wildflowers, orange zest, and a mineral undertone from the amphora emerge. The addition of Fiano provides a delicate floral note and a slight spiciness that adds complexity.
  • Palate: The entry is fresh, creamy, and enveloping. The bubbles are fine and massage the palate with elegance. The structure is light but never mundane, supported by a lively sapidity and citrus freshness. The finish is long and clean, with a return of red fruit and a mineral closure that invites the next sip. A wine of great drinkability and personality.

Recommended Pairings

Perfect as an aperitif and conviviality wine, for light toasts and spontaneous laughter. Ideal with finger foods, raw seafood, summer salads, shellfish, and fresh cheeses. Perfect also on its own, by the pool or at the sea, for those moments that need no explanation.

The Story of Dodò

Dodò is a dedication. A wine designed for Ludovica, the winemaker’s daughter—unique, free, and unpredictable like the bubbles rising in a glass. The label tells of the meeting between two journeys, two souls that cross paths and always find each other, even when the sea is vast. It is a father’s love transformed into wine, a toast to the freedom of being oneself.

Why Choose It

Because Dodò is not just a wine, it is a message in a bottle. It is for those looking for a rosé that goes beyond simple drinkability, that tells a story, and brings an emotion with it. It is for true toasts, the ones made with the people you love. A unique, free, and unpredictable wine, just like its muse.
