Iacopone is a white wine by Iacopo Paolucci, made from Grechetto Di Todi DOC grapes. The wine undergoes 48 hours of skin maceration, followed by aging in stainless steel until spring, with sur lie aging and weekly bâtonnages. It is produced without chemical enological additives, except for minimal use of sulfites, and without filtration.
