Nero Jacopone is a red wine by Iacopo Paolucci, made exclusively from Grero grapes. The wine undergoes 20-30 days of skin maceration with separate vinifications, followed by aging in tonneaux for 8 months and an additional 4 months in the bottle. It is vinified without chemical enological additives, except for minimal sulfite use, and without filtration.
