Selvaxe from Cantina Pequena Adega Romana is a white wine made from a blend of both white and red grape varieties such as Godello, Treixadura, Mencia, Palomino, and Alicante Bouschet.
The white grapes undergo a long maceration on the skins, while the red grapes are vinified in white.
It ferments with indigenous yeasts and then ages for 9 months in terracotta amphorae called tinajas, developing a layer of flor.
