Valli Unite – Gaitu Colli Tortonesi DOC 2018

In the Valli Unite ('United Valley') more than fifty years ago, three farmers tired of 'conventional' chemical-filled farming decided to form a commune where they could co-exist and combine forces to benefit the group. Twenty-five members are now part of the project, making bread, cheese, meats and of course wine. They are almost completely self-sufficient, using solar panels for power and making buildings from material found on the estate. Ottavio is in charge of winemaking. His family have been doing it since 1382 and the 20 hectares of vineyards are planted with Timorasso, Cortese, Croatina, Dolcetto, Moretto, Barbera and Merlot. All except Merlot are traditional Piedmontese grapes which reflect the character of this wonderful terroir. The vines are farmed biodynamically and wines are made with minimal intervention. Everything is done as naturally as possible, wild yeasts are used and additions of sulphur are kept to an absolute minimum.
