Brut Nature from Weingut In Der Eben winery is a sparkling wine that redefines the potential of Schiava, the symbolic grape variety of Alto Adige—an atypical classic method that starts from ripe and naturally soft grapes. The cuvée followed a unique path: after one year of aging in tonneaus, the tirage was carried out using Petit Manseng must instead of sugar, for a more integral secondary fermentation. The “presa di spuma” lasted for forty months sur lie, well beyond the 30 declared on the label, providing extraordinary complexity.
